  • 2 tablespoons Olive Oil
  • 1 tablespoon of Dijon Mustard
  • Salt and Pepper


Heat up veggie broth or water in a pot. Add quinoa, lower heat to low, cover, and simmer, covered, for 15 to 20 minutes, or until cooked and water is absorbed. Take off of the burner and let to cool.

To a big bowl, add cooked quinoa, chopped parsley, cherry tomatoes, red bell pepper, and cucumber.

To create the dressing, whisk together the lemon juice, olive oil, Dijon mustard, salt and pepper in a small bowl.

Toss to coat evenly the quinoa salad with the dressing.
